I've recently tried a wonderful recipe from my Amish cookbook.
BROCCOLLI CASSEROLE
1 head brocolli
1 head cauliflower
1 can mushroom soup
2 eggs well beaten
1 cup grated cheddar cheese
1 medium onion chopped
1 cup mayonnaise
1/2 cup melted butter
Cook broccoli and cauliflower until tender & crisp (?), drain well and place
into a 2qt baking dish.
Combine soup, eggs, cheese, onions, mayonnaise and butter, pour over hot
veg.
Bake at 325 degrees 25 to 30 minutes until bubbly!
My contribution is to serve with crusty bread and white whine!

Mouse, I didn't know you were Amish. In fact, I didn't think the Amish used
computers. <lol>
Anyway, you questioned the cooking of the broccoli until "crisp". That means
it is done "al dante -- or until it is cooked but still crunchy". You don't
want to cook it fully or it will be like mush.

Another recipe which is good -- and I am sure you have not tried it in Stoke on
Trent -- it's the green been casserole. You simply take fresh (about 2 cups of
cut, sliced or even french cut (long and stringy like pasta). You cook the
beans until they are al dante -- or just slightly crisp. You drain them and
mix in 1 can of mushroom soup, 1 cup grated cheddar cheese or a small can of
cheddar cheese soup and 1/2 can of crispy fried onion rings (the canned onion
rings are great for cooking but if you prefer to make your own fried onion
rings, they work out even better.)
Mix them all together and put it in a greased casserole dish (can be sprayed
with a non-stick spray, too). Sprinkle the rest of the can of onion rings over
the top or put extra fried onion rings on the top of the casserole if you make
it from scratch.
Bake it in a 325F oven for about 30 minutes until bubbly. Serve.
This goes great with your crusty bread and whine -- along with chicken, beef,
pork or anything else you are serving for dinner. You can even eat it alone
because it's awesome.
